Serves 2:
200 g leeks, keeping only the parts, the whiter
200 grams of peeled potatoes, diced 1 liter of water
salt two tablespoons of cream
100 g creme fraiche or sour cream (not found, it is also delicious without)
pepper chopped chives
Preparation In a pot with thick bottom, put the leeks, potatoes, water, salt and bring to a boil over high heat. Cover partially, reduce heat and simmer for 30 minutes, until vegetables are tender. Season with salt and pepper, and blend with immersion blender.
Serve with a spoonful of cream and a sprinkling of fresh chives.
